An activity that is still very manual: pruning trees, harvesting olives.
Olive cultivation remains a largely manual activity, where human hands perform the main tasks: pruning the trees to guide their growth and production, and harvesting the olives. Throughout the year, however, there is also the maintenance and fertilization of the soil, the monitoring of the trees, and the application of targeted treatments, when necessary, against various threats to the olive tree. Early November marks the time for the olive harvest. The olives are picked when they are just beginning to ripen, from green to black.
Here, the harvest is done by hand on small trees or using long-handled shakers for larger trees. Recently, a trailer was developed to unroll a tarpaulin tree by tree and allow the use of a trunk shaker for the trees laden with olives. Harvested onto nets so they don't touch the ground, the olives are placed in openwork crates and taken to the mill as quickly as possible.
