Abundant sunshine and light are conducive to the ripening of the olives.

The sunny yet harsh terroir of Aups is a land of contrasts and transition between Lower Provence and the Prealps of the Upper Var. The climate is quite warm in summer despite the altitude, but winters can be severe. These conditions, however, remain favorable for olive cultivation up to an altitude of approximately 550 meters. The magnificent natural amphitheater located north of the castle is the most suitable area for olive growing.

The wisdom of our ancestors was not mistaken in planting olive trees on these terraced slopes. The abundant sunshine and light allow the olive trees to bear fruit and the olives to ripen. Thus situated, the olive trees of Taurenne have been able to withstand the cold winter temperatures and the mistral wind.
