In 2012, the Taurenne estate invested in an ultramodern mill which allows it to control the entire production process, from the orchard to the bottling of the oil.
The mill, located in the middle of the orchards, collects the fruit from the different plots every day, with the harvest carried out variety by variety at the most favorable time for each one. Thus, the quality of the fruit is respected by picking at the optimum of the aromatic richness of the olives and by processing carried out according to our know-how and without delay after picking.
The production of olive oil by cold extraction consists of a series of operations: washing the olives, crushing them, then the crucial step of malaxation to release the oil contained in the cells, and finally decantation to separate the oil from the olive mill wastewater and pomace. The last operation is centrifugation to remove any remaining impurities from the oil.
All these steps must be done as quickly as possible to avoid any fermentation of the olives, which would alter the quality of the olive oil.
The oil is then stored in a stainless steel tank at a regulated temperature, to allow it to settle quietly.
After physico-chemical control and organoleptic analysis of each batch obtained comes the assembly phase between the different varieties to constitute L'Or de Taurenne in AOP Provence.
