A great reward for a unique product that requires special attention!

The term "Fruity noir" defines an oil with very different and distinctive aromas.

So, what is fruitiness? Well, just as wine has aromas and a bouquet, olive oil has what we call "fruitiness." It represents all the aromas that come from the olive.
Moreover, in the world of oils, olive oil is a very special case. Unrefined and produced not from the seed but from the fruit, olive oil boasts an immense aromatic range, unlike that of seed oils. One can find aromas of other fruits, more or less intense and varied depending on the olive variety.
Moreover, technical advances in harvesting and extraction allow the production of intensely aromatic oils, thus providing multiple surprises and pleasures to tasters and consumers.

However, the Fruity Black variety stands out in particular. Just as some red wines, after long aging, acquire quite characteristic aromas, Fruity Black oils, whose production method is different, develop particular aromas.
These oils are produced from olives that, after harvesting, are stored and matured for 4 to 6 days under controlled, appropriate, and managed conditions (ventilation, temperature, and time) before the oil is extracted (pressed). This process reduces bitterness and pungency, promotes the development of specific aromas, replacing the initial aromas found in fresh fruit, and eliminates any vegetal character.
This process is associated with old-fashioned techniques, with the aim of providing a product profile that meets certain taste preferences, such as a traditional oil reminiscent of the "tastes of our childhood"...
